When I was young , my dad taught me a lot about skills to take DNA in the mushrooms out and make marinade with some things else to make fungus. As I needed the money for studying, I was working as a kitchen hand and I realized my love for food. So I learnt and created a lot of dishes. Then I applied to be a chef in Vietnamese ,Chinese and Malaysian restaurants. In this time I also studied accounting. When I finished my accounting, I wanted to learn more about western cuisine so i applied for William Anglish institute for 2 years to learn Cooking. To cover the costs, I had to work 17 hours per day as a butcher in a butcher shop in Victoria market. When the market closed, I got on the train and back to the restaurant working until 12pm. I did that for 6 years.
Eventually, a customer told me he loved vietnamese food so much and he also loved vietnamese medicine when he went to Sapa and he wish that there was a cooking and medicine teaching class in Vietnam. That idea struck me and led me to combine all my skills about food, medicine, butcher and biologist to open a cooking class now where I share my love and passion of food with my guests.

His overseas experience makes him an ideal communicator in helping us understand Vietnam culture from an outside point of view. It was truly a local immersion experience at the Cu Chi Village - both my husband and I each enjoyed different aspects - the history buff in him loved the Cu Chi Tunnel experience, the nature lover in me loved the rice paper making, organic farms & mushrooms and the foodies in us loved the bbq dinner and cooking classes. We fell in love with the Vietnamese Fish Sauce - and all in all it was fascinating to learn about the history and way of life of the Cu Chi Village. The experiences included many firsts for us - fresh cow milk with coffee.. waddling in a historic tunnel... Tan is very proud and passionate about sharing Vietnamese culture, and he gets very excited if you are the adventurous type! The guest room in the school is a simple, clean, no-frill type that meets one's basic needs with the addition of cable TV. I highly recommend relaxing on the hammock in the middle of the day, falling asleep while the hammock rocks soothingly, and taking in the view of the endless green fields. Simple pleasures...
